Tuscan Kale Salad with Tamari, Lime and Sesame Dressing

Ingredients

- 2 bunches Tuscan kale, stems removed, leaves stripped, and rinsed
- 2 large carrots, grated
- 2 tbsp sesame seeds, lightly toasted

Dressing
- 2 tbsp sesame oil
- 2 tbsp tamari - 2 tbsp mirin
- 1 tsp honey, agave or maple syrup
- 1 tsp ginger grated - 1 lime, juiced

Method

1. Roughly chop the kale leaves. Place in a mixing bowl.

2. To make the dressing, whisk all ingredients in a small bowl.

3. Pour a little dressing onto the kale leaves and massage for 2 minutes. Leave o sit for 10 minutes.

4. Add the carrot and sesame seeds and mix well.

5. Add a little more dressing to desired taste.

6. Leftover dressing can be stored in the fridge for one week.
