Sweet Potato Tacos

Ingredients

- 1 large sweet potato ~350g, peeled and cut into 1.5cm cubes
- 1 Tbsp olive oil
- Sea salt
- 1 – 2 tsp chili powder
- 1 – 2 tsp chili flakes
- 1 avocado mashed
- ½ lime, juiced
- 1 cup purple cabbage, shredded, 1 capsicum, finely sliced,1 carrot, julienned or shredded.
- Butter lettuce leaves, washed and torn
- 10 mini tortillas
- Coriander leaves and lime wedges to serve
- Optional: hot sauce

Method

1. Preheat oven to 180C. line a baking tray with baking paper.

2. Add sweet potato to a bowl and toss with olive oil, salt and chili powder,

3. Spread the sweet potatoes across the baking tray. Season with a little more salt.

4. Roast for 30 minutes, giving the tray a little shake halfway through. Remove from oven and set aside. Turn oven down to 80C.

5. Combine the avocado and lime juice

6. Grill the tortillas, in batches, over medium-high heat for 1-2 minutes or until charred and warmed through. Keep in the oven to keep warm.

7. Assemble the tacos with your choice of toppings.
