Stuffed Button Mushroom

Ingredients

- 15-20 medium/large button mushrooms, destemmed
- ¼ cup sundried tomatoes
- 1/3 cup marinated artichoke hearts
- 2 cloves garlic
- ¼ block cream cheese, softened/ room temperature
- - ½ cup parmesan, grated
- 6 basil leaves
- Salt and pepper

Method

1. Preheat the oven to 180C. Line a baking tray with baking paper

2. Add the sundried tomatoes, artichokes, garlic, cream cheese, parmesan, basil leaves, salt and pepper to a blender. Pulse until well combined. Adjust for taste.

3. Fill mushroom cups with the cheese filling.

4. Bake in the oven for 15 – 20 minutes.

5. Remove from oven and top with chili flakes and basil leaves.
