Strawberry Chia Jam

Ingredients

- 2 cups fresh or frozen strawberries
- 4 tablespoons chia seeds
- 1 tsp vanilla bean paste or extract

Method

1. Heat strawberries in a medium saucepan over medium-high heat, stirring occasionally, until the fruit is heated through and begins to break down and bubble.

2. Use a spoon or potato masher to mash the fruit to your desired consistency.

3. Stir in the vanilla paste and the chia seeds until combined.

4. Remove from heat and let cool for 10 minutes.

5. Transfer to a sealed container and refrigerate for up to 1 week, or freeze for up to 3 months.
