Sourdough Toast with Whipped Feta and Balsamic Roasted Tomatoes
Ingredients
- 200g Feta
- 2 big spoonful's of Greek yoghurt
- Olive oil
- 200g large cherry tomatoes
- Caramelised balsamic vinegar
- Salt and pepper
- Basil leaves to serve
- Sourdough bread, cut into 4 thick slices, toaste
Method
1.Preheat the oven to 180C. line a baking tray with baking paper.
2. Arrange the cherry tomatoes on the baking tray and drizzle with a little olive oil and caramelised balsamic vinegar. Season with salt and pepper and roast for 30 minutes, or until tomatoes start to burst. Remove from oven and allow to cool.
3. In a food processor, add the feta, Greek yoghurt, 1 Tbsp olive oil and season with cracked pepper. Blitz to combine into a smooth consistency.
4. Spread the whipped feta mix on to the toasted sourdough.
5. Add the tomatoes on top and sprinkle with basil leaves.
