Sesame Slaw
Ingredients
- ¼ purple cabbage, shredded
- 2 carrots, shredded
- 1 red capsicum, deseeded and finely sliced
- 1 broccoli stem, finely sliced
- 4 radishes, finely sliced
- Small handful snow peas, sliced
- 1 bunch coriander, chopped
Dressing
- 3 Tbsp olive oil
- 1 Tbsp toasted sesame oil
- ¼ cup rice wine vinegar
- 3 Tbsp honey
- 1 Tbsp Coconut Amino Acids or tamari
- 1 garlic clove, crushed
- 1 Tbsp ginger, finely grated
- ½ tsp salt
- 1 tsp chili flakes
Method
1. Toss slaw ingredients together in a large bowl. Add cilantro and shallots.
2. Whisk dressing ingredients together in a small bowl.
3. Pour dressing onto slaw and toss well.
4. Garnish with toasted sesame seeds and toasted peanuts.
