Salad with Sundried Tomato and Walnut Dressing

Ingredients

Salad - 1 cup red cabbage, finely sliced - 2 Lebanese cucumbers, diced - 200g cherry tomatoes, halved - ½ red onion, finely diced - 6 radishes, finely sliced - 1 red capsicum, sliced - Handful of mint leaves, roughly chopped - Small handful of toasted walnuts - Extra sundried tomatoes, chopped, to serve - Lemon wedges to serve

Dressing - Juice of 2 lemons (½ cup) - ¼ cup olive oil - 2 garlic cloves - Small shallot - Big handful of fresh basil - 2 pinches sea salt - Fresh ground pepper - 12 sun dried tomatoes (marinated in olive oil) - ¼ cup toasted walnuts

Method

1. Add all dressing ingredients to a blender and blitz well to form a smooth consistency.

2. Add all salad ingredients to a serving bowl and stir to combine well.

3. Toss everything together and top with extra walnuts and sundried tomatoes and lemon wedges.
