Salad with Spicy Peanut Dressing
Ingredients
Salad - 2 cups purple cabbage, shredded - 1 red capsicum, deseeded and finely sliced - 3 Lebanese cucumbers, sliced into rounds - 2 carrots, peeled and sliced into rounds - 6 radishes, sliced into rounds - 12 cherry tomatoes, halved - 4 big handfuls rocket - 1 bunch coriander, leaves roughly chopped - ¼ roasted peanuts, roughly chopped
Dressing - 5 tbsp natural peanut butter - Juice of 1 ½ limes - 2 tbsp tamari - 1 tsp fish sauce - 1 – 2 tbsp chili flakes - 1 tsp maple syrup or honey - 3 – 4 cloves garlic - Salt and pepper
Method
1. To make the dressing, add all ingredients into a small food processor and whiz until well combined. Add ¼ cup of water and whiz again. Adjust for taste.
2. Toss all salad ingredients in a large salad bowl and mix well to combine.
3. Serve the salad with the dressing on the size and with lime wedges.
