Roasted Baby Capsicums with Marinated Olives, Walnuts, Feta and Mint
Ingredients
- 2 packets of baby capsicums or 2 big handfuls
- Olive oil
- Salt and pepper
- 1/3 cup walnuts lightly toasted
- 100g your choice of feta - Small handful or marinated and pitted olives - Small handful mint leaves - Caramelised balsamic vinegar
Method
1. Preheat the oven to 180C and line a baking tray with baking paper.
2. Scatter the capsicums on the try and drizzle with olive oil. Season with salt and pepper.
3. Roast the peppers for 25 minutes. Mix the around or flip over after 15 minutes.
4. Remove from the oven and place the capsicums on a serving plate.
5. Scatter the olives, toasted walnuts, feta and mint leaves over the top.
6. Drizzle with the caramelised balsamic to serve.
