Refreshing Cucumber Salad with Peanut Dressing
Ingredients
Salad
- 3 Lebanese cucumbers, finely sliced
- 2 cups Wombok cabbage, finely chopped
- 1 bunch corainder, leaves roughly chopped
- 1 bunch mint, leaves roughly chopped
- 3 greens shallots, finely sliced
- 1 long red chili, finely sliced
- 1 cup frozen edamame beans
Dressing -1 tbsp Peanut butter (or almond butter) - 2 tbsp Mirin - Juice of 1 lime - 1 ½ tsp sesame oil - 1 garlic clove, pressed - 2 tsp ginger, grated - Pinch sea salt
Garnish - 1 tbsp roasted peanuts roughly chopped - 1 tsp Nigella Seeds
Method
1. To make the dressing combine the peanut butter, lime juice and mirin into a small dish and whisk to combine well. Add the remaining ingredients and stir through, set aside whilst the salad is being made.
2. Cover the frozen edamame with boiling water in a small bowl, allow it to sit for 5 minutes. Drain and set aside.
3. In a large bowl, combine the cucumber, Wombok, shallots, coriander, mint, sliced chilli’s and edamame beans.
4. Pour over the dressing and gently toss.
5. Serve straight away for maximum freshness, with the roasted peanuts and nigella seeds sprinkled over the top.
