Red Lentil and Lime Soup
Ingredients
- 2 Tbsp olive oil
- 1 brown onion, peeled and diced
- 4 garlic cloves, crushed
- 1 Tbsp fresh ginger, peeled and grated
- 1 Tbsp crushed chilli flakes
- 2 x 400g can diced tomatoes
- 1 Tbsp tomato paste
- 1 cup dried red lentils, rinsed and drained
- 1L low sodium vegetable stock
- 400ml can light coconut milk
- Salt and pepper
- ½ lime, juiced
Method
1. Heat the oil in a large pot over medium heat.
2. Add the onion and a little of salt and cook until soft and lightly browned. Reduce the heat to low
3. Add the garlic, ginger, chilli flakes and coriander stalks. Stir for 1 – 2 minutes until fragrant.
4. Add the tomatoes and tomato paste. Bring to the boil, reduce heat and simmer for 15 – 20 minutes
5. Add the lentils, stock, coconut milk, and lots of black pepper. Bring to a boil, cover, and reduce to a simmer, stirring only occasionally, until the lentils are tender, 25 to 30 minutes. If your soup is too thick, stir in 1/2 to 1 cup more water to reach your desired consistency.
6. Stir in the coriander leaves and lime juice. Season to taste with salt and pepper and serve.
