Raw Snickers Slice
Ingredients
- 18 medjool dates, pitted and soaked for five minutes
- ½ cup peanut butter
- 1 Tbsp vanilla extract
- 1 cup activated buckwheat or puffed brown rice/quinoa
- ¾ cup unsalted roasted peanuts, roughly chopped (you can leave raw if you wish for 100% raw bar)
- ¼ cup coconut oil, melted
- ¼ cup raw cacao powder
- 1 Tbsp maple syrup
- pinch sea salt
Method
1. Line a baking tin with greaseproof paper.
2. Place the dates, peanut butter and vanilla in food processor and blitz until mixture comes together to form a paste.
3. Combine date mix, buckwheat and ¾ the peanuts in a bowl and mix to combine.
4. Spread mixture evenly into tin and place in freezer to set.
5. Combine coconut oil, cacao powder, maple and sea salt in a separate bowl and whisk to combine.
6. Pour chocolate mix over the set date mix, sprinkle with peanuts and place back in freezer to set for an hour.
7. When ready, slice into small pieces and serve.
8. Store in the fridge or freezer.
