Raw Cherry Ripe

Ingredients

Base
- 1 cup pecans
- ½ cup almonds
- ¼ cup cacao nibs
- ¼ cup coconut oil, melted
- ¼ cup rice malt syrup
- 1 tablespoon cacao powder
- Pinch salt

Cherry Filling
- 1 ½ cups fresh cherries, destemmed and pitted (frozen can also be used)
- 1 ¼ cups shredded coconut
- ¾ cup almond meal
- 5 dates, pitted and soaked in hot water for 5 minutes
- 1 tsp vanilla extract
- 3 Tbsp coconut oil, melted
- 1 tsp beetroot powder

Chocolate Topping
- ½ cup coconut oil
- ½ cup cacao powder
- 1 ½ Tbsp maple syrup
- Pinch salt
- ¾ cup cherry halves

Method

Base
1. Line a rectangular tin with baking paper.

2. Combine all of the ingredients in a food processor and blitz until well combined.

3. Pour the mixture into the tin and firmly press using your fingers.

4. Transfer to the freezer to set while you make the filling.

Cherry Filling
1. Place all of the ingredients in a food processor and blitz to combine well.

2. Remove the base from the freezer and pour the mixture over the set base. Smoothing the mixture out with a spatula.

3. Transfer to the freezer for 40 minutes.

Chocolate Topping
1. Melt the coconut oil in a small saucepan over a low heat or in the microwave in a bowl.

2. Once melted remove oil from the heat and stir in the cacao, maple syrup and salt. Gently whisk together to create a smooth sauce.

3. Arrange the cherry halves on top of the chocolate, gently pressing into the cherries.

4. Return to the freezer to set.

5. When ready to eat, remove the slice from the freezer and allow to thaw and slice.

6. Store in freezer or refrigerator.
