Purple Slaw

Ingredients

- ½ red cabbage, cut in half and thinly sliced
- 2 beetroots, peeled and finely grated, or blitzed in a food processor
- 2 Tbsp apple cider vinegar
- 3 Tbsp extra-virgin olive oil
- 1 bunch parsley, roughly chopped
- ½ cup walnuts chopped
- Seeds of 1 pomegranate
- Marinated feta in oil

Method

1. Place cabbage in a large mixing bowl. Add 1 Tbsp olive oil and massage the cabbage for 1 minute to soften.

2. Combine the beetroot with cabbage, parsley and pomegranate seeds and any resulting juice from the pomegranate. Season with salt and pepper.

3. Whisk together the cider vinegar and olive oil and toss through the slaw. Top with chopped walnuts and marinated feta.
