Prawn Lettuce Wraps with Peanut Sauce

Ingredients

- 1 head of butter lettuce
- 12 uncooked prawns, peeled and deveined
- ½ tsp sea salt, or to taste
- 1/8 tsp black pepper, or to taste
- ½ Tbsp olive oil
- 1 cup purple cabbage, shredded
- ½ red capsicum, sliced thinly
- 1 cucumber, sliced thinly
- ½ small bunch of coriander
- 1 medium carrot, julienned

Ginger peanut sauce
- ½ cup salted natural peanut or almond butter
- 2 Tbsp soy sauce (tamari for gluten-free eaters)
- 2-3 Tbsp maple syrup
- ½ lime, juiced
- ½ tsp chili flakes
- 1 garlic clove, pressed
- ½ tsp fresh grated ginger (optional)
- Hot water (to thin)

Method

1.Sprinkle prawns with salt and pepper to taste.

2. Add half Tbsp olive oil to a large hot frying pan. Once oil is hot, add prawns and sauté on med/high heat 2 min per side or just until cooked through then transfer to a plate.

3. Combine sauce ingredients to a bowl and whisk until smooth.

4. To assemble lettuce wraps, place the lettuce cups on a platter, add some cucumber, cabbage, carrot, red capsicum, 2 prawns and a couple of coriander leaves.

5. Drizzle the top with the peanut dipping sauce.
