Prawn Lettuce Wraps
Ingredients
- 10 gem lettuce leaves
- 1/3 cup yoghurt
- 1 tbsp flat-leaf parsley, finely chopped
- 2 tsp capers, rinsed, drained, chopped
- 2 tsp chopped chives
- 10 cooked prawns, peeled and deveined
- Juice and finely grated zest of ½ a lime
- ½ tsp smoked paprika
Method
1. Arrange lettuce on a platter.
2. Place the yoghurt, parsley, capers and chives in a bowl and stir to combine. Season.
3. Dollop into lettuce and top with prawns.
4. Drizzle over lime juice and sprinkle with zest and paprika to serve.
5. Serve with lime wedges
