Portobello Mushroom Pizzas
Ingredients
- 12 portobello mushrooms, stalks removed
- 2 Tbsp olive oil
- 24 truss cherry tomatoes
- 24 pitted kalamata olives, sliced
- 12 cubes of Meredith dairy goats cheese
- 2 Tbsp good quality store bought pesto (or homemade)
- Salt and pepper
- Small handful basil leaves
Method
1. Heat oven to 180C, line 2 baking trays with baking paper.
2. Arrange the tomatoes on the tray and roast for 20 minutes. Remove from oven and tray, set aside. Replace the baking paper.
3. Arrange the mushrooms on 2 baking trays.
4. Brush the mushrooms lightly with olive oil.
5. Add a small dollop of pesto, 2 roasted cherry tomatoes, a sprinkle of olives and half of a goats cheese cube to each pizza.
6. Season with sea salt and black pepper and bake in oven for 15 minutes.
7. Remove from oven and add a few basil leaves to each pizza..
