Pimped Up Greek Salad

Ingredients

- 2-3 cucumbers, cut into half moons
- 400g cherry tomatoes, halved
- 1 red onion, diced
- 1 red capsicum, sliced - 1 yellow capsicum, sliced
- Big handful of kalamata olives, pitted
- 200g fetta, cut into big cubes
- Fresh herbs such as parsley, mint, tarragon or oregano
- Toasted pine nuts
- Olive oil
- Sumac
- Salt and pepper
- Lemon wedges

Method

1. Add the cucumbers, tomatoes, onion, capsicums, olives and fresh herbs into a bowl and stir to mix.

2. Top with the fetta cubes and pine nuts.

3. Drizzle with olive oil and season with salt and pepper.

4. Sprinkle a little sumac over the top.

5. Serve with lemon wedges
