Mini Caprese Salad
Ingredients
- 400g mixed coloured cherry tomatoes, halved
- 200g mini bocconcini
- Fresh basil leaves
- Sea salt
- Extra virgin olive oil
- Caramelised Balsamic Vinegar
Method
1. In a bowl, combine halved cherry tomatoes, mini bocconcini 100g pitted and a handful of fresh basil leaves.
2. Sprinkle with sea salt, and drizzle with 2 tbsp of caramelised balsamic vinegar.
