Mediterranean Salad with Lemon and Dijon Dressing

Ingredients

Salad - 3 Lebanese cucumbers, sliced into half moons - 1 red capsicum, sliced - 1 yellow capsicum, sliced - ½ red onion, diced - 200g cherry tomatoes, halved - Your choice of fresh herbs such as parsley, mint, oregano, basil - Large handful pitted kalamata olives - 13 cup lightly toasted walnuts - Large block of feta

Dressing - Juice of 1 lemon - Zest from 1 lemon - 2 Tbsp white wine vinegar - 1 Tbsp Dijon mustard - 1 tsp dried oregano - Salt and pepper - 1/3 cup olive oil

Method

1. Place all the salad ingredients except the fetta into a bowl. Mix gently and then add fetta to the top.

2. Place all the ingredients into a small bowl and whisk to combine well.

3. Top the salad with the dressing to serve
