Mango, Passion Fruit, Strawberry and Blackberry Chia Pots

Ingredients

- 1/3 cup chia seeds - 1 cup unsweetened coconut milk (carton not tinned) - 1 cup water - 1 - 2 Tbsp cinnamon - 2 tsp vanilla bean paste - 1 cup of frozen fruit - a mix of mango, strawberries and blackberries - Pulp of 3 large passion fruit - 1 cup natural yoghurt

Method

1. Combine chia seeds, coconut milk, water, cinnamon, and vanilla in a bowl. Mix for 30 sec and the leave to set in the fridge. You may need to stir a few more times.

2. Blend the mango, strawberries, blackberries, passion fruit and yoghurt until smooth. Keep in fridge to set.

3. When chia has set, divide chia mix into desired number of pots.

4. Add fruit and yoghurt on top of the chia.
