Lime and Coriander Prawns and Zoodles
Ingredients
- 2 tbsp butter
- 24 prawns, shelled and deveined, tails intact
- 4 cloves garlic, pressed
- 1 pinch chili flakes (optional)
- ¼ cup vegetable stock
- Juice of 1 lime
- 3 medium zucchini, spiralized
- Salt and pepper to taste
- 1 tsp lime zest
- 1 bunch coriander, leaves chopped
Method
1. Melt the butter in a pan over medium-high heat until frothing, add the prawns, cook for 2 minutes, flip, add the garlic and chili flakes and cook for 1 more minute before setting the pawns aside.
2. Add the vegetable stock and lime juice to the pan to deglaze it.
3. Simmer for 2 minutes, add the zucchini noodles and cook until just tender, about 2 minutes, before seasoning with salt and pepper, adding the prawns, lime zest and coriander, tossing everything and removing from the heat.
4. Divide into serving bowls
