Lemon Barramundi with Pea and Mint Hummus
Ingredients
- 500g frozen peas
- 200g good quality store bought hummus (or homemade)
- ½ lemon, juiced
- ¼ cup mint, finely chopped
- 1/3 cup flour
- 1 lemon, rind finely grated
- 4 fillets of barramundi
- 2 Tbsp olive oil
- Mixed salad leaves to serve
- Lemon wedges to serve
Method
1. Place peas in a large heatproof bowl. Pour over enough boiling water to cover. Stand for 2 mins. Drain well.
2. Add the peas, lemon juice and hummus to a blender and blitz to combine well. Stir in the mint and season.
3. Combine flour and lemon rind in a large bowl. Season.
4. Add the fish and toss to coat.
5. Heat the oil in a large frying pan over high heat.
6. Cook the fish for 3-4 mins each side or until golden and just cooked through.
7. Divide the pea and mint hummus, fish and salad leaves among serving plates. 8. Serve with lemon wedges
