Green Soba Noodle Salad with Sesame Lime Dressing

Ingredients

Salad
- 180g soba noodles
- 1 cup frozen peas
- 1 bunch broccolini, sliced in half
- 1 bunch asparagus, sliced on a diagonal
- 1 handful of snow peas, ends trimmed, and sliced diagonally
- 2 handfuls of baby spinach
- 2 handfuls of snow pea tendrils or salad leaves
- 2 shallots, sliced on a diagonal
- sesame seeds, avocado, coriander, and chopped tamari almonds to serve

Dressing
- 1 lime, juiced
- 2 tbsp sesame oil
- 4 tbsp tamari
- 2 tbsp mirin
- 1 tbsp honey or maple syrup
- 1 pinch chilli flakes
- 2cm piece of ginger, grated
- 2 cloves garlic, crushed

Method

1. Whisk all of the dressing ingredients together. Set aside.

2. Steam the greens until bright green, run under cold water and drain.

3. Cook the soba noodles until al dente. Run under cold water and drain.

4. Arrange the snow pea tendrils or salad leaves on a serving platter.

5. Layer the greens, baby spinach and noodles.

6. Top with the shallots, sesame seeds, avocado ect.

7. Drizzle dressing over the salad before serving.
