Edamame Coleslaw with Miso, Tahini and Sesame Dressing

Ingredients

- 300g red cabbage, thinly shredded
- 1 large carrot, coarsely shredded
- 2 green onions, thinly sliced
- 300g edamame beans, blanched then rinsed under cold water
- ½ cup fresh coriander, coarsely chopped
- 50g snow pea sprouts, trimmed
- 2 Tbsp toasted sesame seeds

Dressing
- 1 garlic clove, pressed
- 3 tsp tahini
- 3 tsp rice wine vinegar
- 3 tsp extra-virgin olive oil
- 2 tsp maple syrup
- 2 tsp white miso paste
- 1 tsp sesame oil

Method

1. Combine all ingredients for the dressing in a large bowl. Whisk to combine well.

2. Add cabbage, carrot, onion, coriander, sprouts and edamame to a large mixing bowl

3. Drizzle the dressing over the salad and toss to mix well.

4. Serve with a sprinkle of sesame seeds.
