Edamame, Broad Bean and Butter Bean Toast with Feta
Ingredients
-1 cup edamame, blanched and drained
- 1 cup broad beans, blanched and drained
- 1 tin butter beans, rinsed and drained
- 1 - 2 garlic cloves
- Small handful mint
- Small handful basil
- Juice of 1 lemon
- Salt and pepper
- 4 slices sourdough bread, cut into thick slices, toasted
- Feta to serve
- Chili flakes to serve
Method
1. Add the edamame, broad beans, butter beans, garlic, mint, basil, lemon juice, salt and pepper to a blender. Blitz to combine well.
2. Top the toast with the bean mix.
3. Crumble a little feta over the top.
4. Sprinkle with chili flakes and extra mint and basil leaves.
