Dressings and Sauces
Tamari, Lime and Sesame Dressing
Ingredients
- 2 tbsp sesame oil
- 2 tbsp tamari
- 2 tbsp mirin
- 1 tsp honey, agave or maple syrup
- 1 tsp ginger grated
- 1 lime, juiced
Method
1 .Place all ingredients in a small bowl and whisk to combine well.
Coconut Aminos Dressing
Ingredients
- 2 tbsp toasted sesame oil
- 2 tsp lime juice
- 2 tbsp almond butter, can also use peanut butter
- 1 tbsp coconut aminos
- 2 tsp coconut sugar
Method
1 .Place all ingredients in a small bowl and whisk to combine well.
Herb Yoghurt
Ingredients
- 1 cup of Greek yoghurt
- ½ cup of mint leaves
- ½ cup of coriander leaves
- 2 cloves of garlic, crushed
- Juice of ½ lemon
- Black pepper
Method
1. In a small blender place the herbs, garlic, lemon, and half of the yoghurt.
2. Blend to a puree, then fold through the remaining yoghurt.
3. Season with salt and pepper
Cashew Nut, Herb, Ginger and Lime Dressing
Ingredients
- ½ cup cashews
- ¼ cup olive oil
- 1 inch piece of ginger, peeled and sliced
- 4 or more garlic cloves
- 1 or more chilis depending on taste, chopped
- ½ bunch coriander or herb of your choice
- 1 ½ Tbsp sesame oil
- 3 Tbsp tamari
- 3 Tbsp rice vinegar
- 2 ½ Tbsp nutritional yeast
- 2 limes, juiced
- Red chili flakes to taste
- Pinch of sea salt
Method
1. Place all of the ingredients into a food processor or blender and blitz to combine into a thick paste. If you’re using a small processor, you may want to add a few ingredients at a time, blitzing in between.
2. Adjust for taste.
Avocado and Lime Dressing
Ingredients
- 1 avocado
- Large handful of coriander
- Juice of 1 lime
- ½ red onion, chopped
- 1 green chilli, chopped
- Cold water
- Salt and pepper
Method
1. Combine the red onion and lime juice. Stand for 10 minutes.
2. Add the rest of the ingredients to the red onion and lime juice and use a small blender to blend until a thick sauce is achieved.
3. Adjust for seasoning.
Roasted Tomato and Walnut Dressing
Ingredients
- 400g cherry tomatoes
- 1/3 cup walnuts, roasted
- ¼ cup olive oil
- Juice from ½ lemon
- 1 Tbsp caramelise balsamic vinegar
- ¼ cup chopped parsley
- ¼ cup chopped mint
- 1.4 cup chopped basil
- 4 cloves garlic
- Salt and pepper
Method
1. Preheat the oven to 180C. Line a baking tray with baking paper.
Arrange the tomatoes on the baking paper. Drizzle with a little olive oil and season with salt and pepper.
2. Roast for 20 minutes, or until the tomatoes start to burst. Remove from oven and set aside.
3. Heat a small frying pan over low to medium heat.Add all of the walnuts to the pan. Allow to toast for a few minutes, shaking the pan occasionally. Keep an eye on the nuts so that they don’t burn.
4. Once toasted, remove from the pan and set aside to cool.
5.Combine all the ingredients into a blender and blitz until well combined.
Ingredients
- 200g Feta
- 2 big spoonful's of Greek yoghurt
- 1Tbsp olive oil
Whipped Feta
Method
1. In a food processor, add the feta, Greek yoghurt, olive oil and season with cracked pepper.
2. Blitz to combine into a smooth consistency.
Mango Salsa
Ingredients
- 1 mango, flesh diced
- 200g cherry tomatoes, halved
- 1 lime, juiced
- 1 jalapeño, finely chopped
- ½ red onion, finely diced
- ½ bunch coriander, finely chopped
Method
1 .Add all the ingredients into a small mixing bowl and gently stir to combine.
Lemon, Mango and Jalapeño Dressing
Ingredients
- 1 mango, flesh chopped
- ½ jalapeño, deseeded and chopped
- Juice of ½ lemon
- 1 Tbsp maple syrup or honey
- 2 Tbsp olive oil
- 1 Tbsp whit balsamic vinegar
- Salt and pepper
Method
1 .Add all ingredients into a food processor or blender and blitz to combine. Adjust for taste.
Wasabi Dressing
Ingredients
- 1 Tbsp mirin
- ¼ cup extra virgin olive oil
- 2 tsp wasabi paste
- Juice of 1 lime
Method
Place all ingredients in a small bowl and whisk to combine well.
Yoghurt Sauce
Ingredients
- 1 cup plain thick Greek yogurt
- 1 Tbsp lemon juice
- 2 Tbsp fresh chopped dill, mint and parsley
- 1–2 garlic cloves, pressed
- ½ tsp sumac (optional)
- ¼ tsp salt, or to taste
Method
1 ,Place all ingredients in a small bowl and whisk to combine well.
Miso, Tahini and Sesame Dressing
Ingredients
- 1 garlic clove, pressed
- 3 tsp tahini
- 3 tsp rice wine vinegar
- 3 tsp extra-virgin olive oil
- 2 tsp maple syrup
- 2 tsp white miso paste
- 1 tsp sesame oil
Method
1. Place all ingredients in a small bowl and whisk to combine well.
Herb Dressing
Ingredients
- large bunch mint, leaves only
- small bunch coriander, leaves only
- small bunch basil, leaves only
- 1 green chilli, deseeded and chopped
- 1 garlic clove
- 100ml extra virgin olive oil
- 2 limes, zested and juiced
- 2 tbsp white wine vinegar
- 2 tsp honey
Method
1 .Blend all the ingredients in a food processor to combine well.
Creamy Tahini Yoghurt
Ingredients
- 400g thick Greek yogurt
- 3 Tbsp tahini
- 5 garlic cloves, pressed - ½ tsp sea salt
- Pinch of chilli flakes, such as Aleppo (optional)
Method
1 .Place all ingredients in a small bowl and whisk to combine well.
Peanut Sauce
Ingredients
- 130 g salted peanut or almond butter
- 1 Tbsp tamari or soy sauce
- 1 Tbsp maple syrup
- 1/2 medium lime, juiced
- ½ - 1 tsp chili flakes
- 1 garlic clove, pressed
- ½ - 1 tsp fresh grated ginger
- Hot water (if needed to thin)
Method
1. Add all ingredients except water to a mixing bowl and whisk well to combine.
2. Add hot water 1 Tbsp at a time and whisk until desired consistency is achieved (should be pourable but thick)
Clean Living Dressing
Ingredients
1/3 cup apple cider vinegar - 1 Tbsp Dijon mustard - 1 Tbsp olive oil - ½ lemon, juiced - 1 Tbsp hulled tahini - 1 tsp maple syrup
Method
1. Place all ingredients in a small bowl and whisk to combine well.
2. Store in an airtight jar in the fridge for up to one week.
