Chocolate Raspberry Chia Pots

Ingredients

- 1/3 cup chia seeds - ¼ cup cacao - 1 cup unsweetened coconut milk (carton not tinned) - 1 cup water - 1 Tbsp cinnamon - 2 tsp vanilla bean paste/ extract - 1 ½ cup frozen raspberries

Method

1. Combine chia seeds, cacao, coconut milk, water, cinnamon and vanilla in a bowl. Mix for 30 sec and the leave to set in the fridge. You may need to stir a few more times to avoid chia seeds clumping.

2. Heat a small saucepan and melt frozen raspberries and stir until it makes a nice liquid. Allow to cool.

3. When chia has set, divide chia mix to desired number of pots.

4. Add raspberry coulis on top of the chia.

5. Store in the fridge for 3 days.

6. Top with your choice of roasted chopped almonds, toasted coconut flakes, fresh berries.
