Carrot and Quinoa Salad

Ingredients

- 1 cup quinoa, rinsed and drained
- 1 ½ cups water
- 3 cups carrots, grated
- 1 – 2 cups celery, sliced
- 3 shallots, sliced on a diagonal
- 1 bunch coriander, chopped
- 1 clove garlic, crushed
- ½ cup chopped almonds, toasted
- ½ teaspoon cayenne
- Salt and pepper to taste

Apple Cider Vinaigrette:
- ¼ cup apple cider vinegar
- ¼ cup olive oil
- 2 tablespoons honey
- Salt and pepper

Method

1. Place quinoa in a saucepan with water and a pinch of salt. Bring to the boil, cover, simmer on low heat until the water has been absorbed. Remove from heat and let stand covered.

2. To make the Apple Cider Vinaigrette, place all ingredients in a small bowl and whisk to combine well.

3. Place carrots, celery, shallots, coriander, garlic and almonds in a large bowl.

4. Toss with the vinaigrette and the cooled quinoa.

5. Season with salt and pepper. Sprinkle in the cayenne.

6. Toss well and serve or refrigerate until serving.
