Caramel Peanut Butter Slice

Ingredients

Base
- ½ cup walnuts
- 4 medjool dates, pitted, soaked in warm water and drained
- 1 tbsp coconut oil
- 2 tbsp cacao powder
- 1 tbsp chia seeds
- 1 tbsp rice malt syrup

Peanut Caramel Filling
- ½ cup peanut butter
- 2 tbsp rice malt syrup
- 4 medjool dates, pitted, soaked in warm water and drained.
- 1 tsp vanilla

Chocolate Topping
- 2 tbsp coconut oil
- ½ cup cacao powder
- 2 tbsp rice malt syrup
- 2 tbsp raw cacao

Method

1. Combine all base ingredients in food processor and blitz to combine into a crumb or paste type consistency.

2. Line a small baking tray with baking paper.

3. Evenly spread base into the tray and place in freezer while you prepare peanut caramel and topping.

4. Place all ingredients for the filling in a food processor and blitz until smooth caramel is formed.

5. Spread over the base then place back in the freezer.

6. Make the chocolate topping by melting the coconut oil in a small saucepan on the stove on low heat. Once oil is melted, remove from heat and add rice syrup and cacao powder, whisking well to create a smooth melted chocolate.

7. Pour chocolate over the slice and spread evenly.

8. Place in the freezer for about 15 minutes.

9. Remove slice from the freezer and cut into even sized pieces.

10. Return slice to freezer and allow to set for 30 minutes. Store in the fridge or freezer.
