Cajun Fish Tacos

Ingredients

- 500g white fish – flathead and monkfish work well, cut into 8 – 10cm pieces
- Cajun spice mix
- 1 mango, cut into 0.5cm thick slices
- ¼ purple cabbage, thinly sliced
- 1 avocado, sliced thinly
- 1 red capsicum, deseeded and sliced thinly
- 12 soft tacos
- 2 limes
- ½ bunch coriander, leaves picked

Method

1. Preheat oven to 100C to keep the fish and tacos warm.

2. Add fish pieces to a large mixing bowl and sprinkle with enough Cajun spice mix to evenly cover all of the fish.

3. Heat 1 Tbsp olive oil in a large frypan over medium heat. Once the oil is hot, cook the fish in batches, turning once.
4. Set in the oven to keep warm.

5. In a medium fry pan, heat a little olive oil on low to medium heat and lightly fry the tacos one by one, adding a little oil each time. Keep in the oven as you go.

6. Assemble your tacos adding a little of each ingredient and a squeeze of lime juice.
