Burrata and Roasted Mini Capsicums

Ingredients

- 2 packets of mini capsicums, washed and dried - Olive oil - Fresh ground pepper - Truffle salt - tsp of garlic powder - 1 ball of burrata - Small handful roasted walnuts, roughly chopped - Parsley, chopped - Caramelised balsamic vinegar

Method

1. Preheat the oven to 180C and line a baking tray with baking paper.

2. Add the capsicums to a mixing bowl. Drizzle with olive oil and season with pepper, truffle salt and garlic powder. Mix to coat.

3. Arrange the capsicums on the lined baking tray and roast for 15 minutes until roasted on the first side.

4. Remove from the oven and give the tray a shake, then put back in for another 15 minutes until perfectly roasted.

5. Remove from the oven, then place the peppers on a serving bowl.

6. Add burrata cheese, some roasted walnuts, and some fresh parsley.

7. Drizzle with some caramelised balsamic vinegar.
