Blackberry and Strawberry Chia Pots
Ingredients
Makes 3 large serves or 4 medium serves
-1/2 cup chia seeds -1 1/2 cup coconut milk -1 cup water -1 - 2 tbsp cinnamon -2 tsp vanilla bean paste -1 cup combined frozen blackberries and strawberries -Pulp of 3 large passion fruit -1 cup natural yoghurt
Method
1 . Combine chia seeds, coconut milk, water, cinnamon and vanilla in a bowl. Mix for 30 sec and the leave to set. You may need to stir a few more times.
2. Blend the strawberries, blackberries and yoghurt until smooth. Keep in fridge to set.
3. When chia has set, divide chia mix into desired number of pots.
4. Add fruit and yoghurt on top of the chia.
5. Store in the fridge for 3 - 4 days
