Apple Berry Crumble

Ingredients

-4 apples, cored and sliced
- 200g frozen strawberries
- 200g frozen blackberries
- 1 orange, juice and zest
- 3 Tbsp maple syrup or honey
- 1 tsp ground cinnamon
- 1 star anise
- Yoghurt, to serve

Crumble
- 1 cup shredded coconut
- 1 cup almond meal
- 2 Tbsp chia seeds
- 1 Tbsp cornflour
- Pinch sea salt
- 3 Tbsp virgin coconut oil, melted
- 2 Tbsp maple syrup
- 1 Tbsp vanilla extract or vanilla bean paste

Method

1. Preheat oven to 180C. Line a baking tray with baking paper.

2. In a bowl, combine apples, strawberries, blackberries, orange zest and juice, maple syrup, cinnamon and star anise. Mix well and transfer to the baking tray.

3. To make the crumble, combine the coconut, almond meal, chia seeds, cornflour and salt. Add the coconut oil, maple syrup and vanilla extract. Mix well until the crumble sticks together.

4. Evenly spread over the top of the fruit mix. Bake in the oven on the middle tray for 35-40 minutes until the apples are cooked through and crumble is golden brown.

5. To serve, place a generous spoonful of warm crumble into a bowl. Top with yoghurt
